An appetizing salad that could accompany your rice. Mostly used with Yellow Rice and i also known as Batu Modju.   

Fried Brinjal Salad

Ingredients

  • 100g Brinjal (.)
  • 1 Medium B onion (.)
  • 2 Green Chillis (.)
  • 1 Medium Tomato (.)
  • pinch Salt (.)
  • pinch Pepper (.)
  • 5 tablespoons Oil (.)
  • 1/2 teaspoon Turmeric powder (.)
  • 2 teaspoons Lymol (.)

Directions

Step 1
Slice the brinjal and rub with turmeric powder and salt..
Step 2
Heat the oil, add brinjal and fry until golden brown..
Step 3
Slice the onion, green chili and tomatoes..
Step 4
Take a bowl ,add all ingredients together and season with salt and pepper..
Step 5
Add Lymol and mix well..
Step 6
You can use fried brinjal salad as accompaniment for rice and curry..
