An easy to prepare  healthy vegetarian soup

Cream of Mushroom Soup

Ingredients

  • 100g Oyster Mushrooms
  • 2 tablespoons Butter
  • 25g Flour
  • 1 Sliced Onion
  • 1 Clove Sliced Garlic
  • 2 Potatoes
  • 1 teaspoon Lymol
  • 200ml Vegitable or Chicken Stock
  • Salt
  • Pepper
  • 5 teaspoons Fresh Cream

Directions

Step 1
Heat a pan, add butter and sauté the onions and garlic for a while
Step 2
Then add the potatoes and the mushrooms and sauté further
Step 3
Now add the flour and mix well
Step 4
Add the stock and bring it to boil and simmer till the vegetables are cooked
Step 5
In another pan, add some oil and sauté a few mushrooms and keep a side to use for garnish
Step 6
Remove the soup from the fire and leave it to cool and blend it
Step 7
Season with Lymol, salt and pepper
Step 8
Serve the soup with spring onions, sautéed mushrooms and cream
