A healthy vegetarian soup

Broccoli and Thampala Soup

Ingredients

  • 50g Thampala Leaves
  • 50g Broccoli
  • 2 teaspoons Chickpea Flour
  • 2 teaspoons Garlic (Sliced)
  • 1 teaspoon Onion (Sliced)
  • 1 teaspoon Oil
  • 1 teaspoon Celery (Sliced)
  • 200ml Vegetable Stock
  • Salt
  • Pepper
  • 1 teaspoon LYMOL
  • 50g Thick Coconut Cream

Directions

Step 1
Sauté the garlic, onion and celery in oil
Step 2
Mix in the chickpea flour while in slow fire
Step 3
Stir in the vegetable stock, add the broccoli and cook until done
Step 4
Add in the red thampala leaves
Step 5
Add salt and pepper to tast
Step 6
Now stir in the coconut milk and cook in slow fire for a few minutes
Step 7
Remove the soup from the fire and add in the Lymol, mix well and serve with bread rolls
