Lime Fried Rice

This is a quick and easy Special Vegetable Fried Rice recipe which you can have for lunch or dinner.
It’s delicious on its own or would go well with a spicy chicken curry.

Ingredients

  • 1 Medium Onion (Chopped.)
  • 25g Butter (.)
  • 2 teaspoons Olive Oil (.)
  • 1 Small Carrot (Diced.)
  • 1 bunch Spring Onion (Cut In To ½ Inch.)
  • 25g Cashew Nuts (.)
  • handful Mint Leaves (.)
  • 1 Medium Tomato Skin (Diced.)
  • 100g Basmati Rice (Cooked.)
  • 2 teaspoons Lymol (.)
  • Salt And Pepper (to taste.)

Directions

Step 1
Heat the pan and add the butter and olive oil together..
Step 2
Add the onion and sauté until translucent and slightly caramelised..
Step 3
Add the carrot and Cashew nuts and fry on a slow fire for two minutes..
Step 4
Add the cooked basmati rice, spring onion, mint leaves and mix well..
Step 5
Season with salt, pepper and LYMOL and take off the fire..
